PGZyme


PGZyme combines a team of researchers performing basic and pre-industrial research on the production of pectinolytic enzymes by a GRAS certified, non-GMO microorganism, Aspergillus sojae, which holds great potential for pectinase production.

In order to obtain high yields of pectinase production, strain improvement and optimization of culture conditions is performed. The downstream process of technical and food enzymes represents a current technological bottleneck.
A suitable strategy will be developed to preserve the benefits obtained with the biosynthetic steps. Downstream processing will be designed and implemented in a cost-effective manner via novel fibrous adsorbents. The project is expected to deliver a pre-competitive technology which is based on a fungal platform employing A. sojae as a bio-factory.
